Genuine sourdough made in Sarpy County Nebraska from a state registered cottage kitchen! Our bread doughs are naturally fermented for a minimum of 24 hours before baking which breaks down the gluten, potentially making them easier to digest. Currently we have 2 public pick ups a week (Wednesday & Saturday). Orders must be placed a minimum of 3 days prior to pickup.

Whats the hype about Sourdough?

First, the unique, tangy flavor, which results from the natural fermentation process involving wild yeast and lactic acid bacteria makes sourdough stand apart from the rest. This process it much different from regular bread, which uses commercial instant yeast.

Also, authentic sourdough is also often considered healthier because the fermentation process can break down some of the gluten in the flour, potentially making it easier to digest.



how our Sourdough Loaves are made:

Cleanse

All utensils and workspaces are thoroughly cleaned and prepped for baking. Ingredients are also premeasured for maximum baking efficiency.

Mix

Just flour, water, sourdough starter (flour & water) & sea salt are combined to make a classic dough. A series of stretch and folds are done to help create structure in the dough. Then the dough is left to rise for 6-8 hours until properly proved.

Chill

The proved dough is portioned then shaped into boules or loaves. After, they are stored in the fridge overnight for a cold-proof which aids in fermentation. The loaves are scored then baked with steam to get a nice rise and crisp crust. Once fully baked, the loaves leave the oven to rest on the cooling rack before being packaged up for orders!
